Yellowtail amberjack (Hiramasa)
Hiramasa, best from early to around the end of summer, have firm, dense flesh, and are never too fatty even at the height of the season Their light, subtle taste make them one of simmer’s supreme sushi temptations. Weighing 3 to 4kgs, most hiramasa are caught in June and July, coinciding with when the fish are believed to be at the apogee of their flavor. More recently however hiramasa from a growing number of sources have become available up to late autumn, blurring the timing of optimum flavor. Drastic changes in the hiramasa’s ecosystem pay no heed to when humans deem the fish best for eating.
