As a chef of Aroy Dee Thai Restaurant, it is my responsibility to create and plan a special menu which attracts new and existing customers to the restaurant. The special menus are consider from season, holiday occasion. For example, winter season, our special menus is Green Curry Chicken set as the spice and heat from the curry with keep customers warm.
Planning the special menu is often done a _______ before the season or holiday occasion start. During the planning, I will need to estimate the cost involve preparing the dish; ingredient, presentations and labour cost. After that I will discuss with the boss, seeking for his opinion and approval. Once he's approved I go ahead and making the order of required ingredients to our food supplies and prepares the dish.
