The present work aimed to study the antimicrobial activity of thyme essential oil, as well as chitosan
that this research has not yet been reported in litera- ture. Also the results of the determination of the inf- luence of initial concentration of thyme essential oil on its encapsulation efficiency showed that the increase in the initial concentration of thyme increased its degree of encapsulation in chitosan microparticles. In the same experiment it was shown that the concentration of glutaraldehyde did not affect the degree of encapsul- ation.
