Fig. 2 shows the comparative microbial inactivation efficacy of
different treatments on lettuce. The initial numbers for YM and TBC
were 4.50 and 5.90 log cfu/g, respectively. Treatment group 3
(SAEWeWW) slightly enhanced all microbial numbers reduction
compared with group 2 (SAEW). Treatment group 4 (SAEW þ US)
significantly (p 0.05) enhanced the reduction of E. coli and
L. monocytogenes. But same as Chinese cabbage, it also slightly
decreased the reduction of YM on lettuce compared with SAEW
treatment alone (group 2). Treatment group 5 (SAEW þ USeWW),
significantly more efficient compared to the two other combined
treatment groups, resulted in maximum reductions of 2.25, 2.40,
2.50 and 2.60 log cfu/g for YM, TBC, E. coli and L. monocytogenes,
respectively.
Fig. 1. Comparative microbial inactivation efficacy of different treatments on Chinese
cabbage. Vertical bars represent mean standard error of mean, n ¼ 6. Bars labeled
with different letters in the same reduction group indicate a significant difference
(p 0.05). DW: distilled water; EW: slightly acidic electrolyzed water (SAEW); EWe
WW: SAEW followed by water wash (using DW); EW þ US: SAEW combined with
ultrasonication; EW þ USeWW: SAEW combined with ultrasonication followed by
water wash.
