2.2.3. Drying technology
Non-blanched (fresh) and blanched leaves of kale was dried to
the predetermined humidity level (below 5%) by hot air or freezedrying.
The process of drying was preceded by the following preliminary
treatments: removing the main vein; washing; cutting
into 2 cm long pieces; and for the blanched samples; blanching for
2.5 min in water at 96e98 C, at a 1:5 weight-for-weight ratio of
leaves to water; cooling; and allowing to drip on sieves
