2.4 Encapsulation of MFR extract in dextrin as the matrix
The encapsulation was carried out by spray drying and freeze drying methods. The ratio between dried MFR extract and dextrin was 1:20. Twenty grams of dextrin were dissolved in 800 mL of distilled water. 1.0 g of MFR extract was diluted in 100 mL ethanol pH 5. These solutions were mixed and adjusted to 1000 mL with distilled water pH 5. Then, the mixture was magnetically stirred for 15 min. Before encapsulation, the sample was kept in a refrigerator. The temperature inlet of spray dryer was carried out at 120oC and temperature outlet at 70oC. Encapsulation yields of MFR product was calculated by equation:
