Organizational charts for a large hotel and a large restaurant are shown in Figures
1.2 and 1.3. An organizational chart shows the relationship among and within departments.
Line functions (associates directly involved in producing goods and services)
and staff functions (the advisers) are spelled out. The human resources (or
personnel) and training departments are examples of staff who advise line departments,
such as the food and beverage department, on matters including hiring, disciplining,
and training employees.
