Gelatin is composed of 50.5% carbon, 6.8% hydrogen, 17% nitrogen
and 25.2% oxygen [30]. Gelatin is derived from the fibrous
insoluble protein called collagen (by chemical denaturation) and
is obtained from bones, skin and connective tissue generated
as waste during animal slaughtering and processing. Collagen
consists of rigid bar-like molecules that arranged in fibres is interconnected
by covalent bonds [31]. These molecules have three
polypeptide chains arranged in a triple helix that is stabilized
by hydrogen and hydrophobic bonds.
