. Medium and fermentation
The synthetic substrate medium consisted of (g/l) 1
K2HPO4, 2 (NH4)2SO4, 1 MgSO47H2O and 0.5 yeast
extract. Fructose or glucose (20 g) was added as a carbon
source. Industrial food wastes used were soy wastes from
Vitasoy Ltd. and malt waste from Carlsberg Ltd. Milled
malt; semisolid soy wastes were oven-dried and digested
with 1.0 M HCl at 105 °C for 5 h. Samples were neutralized
with NaOH.
The fermentation was carried out in the fermenter with
growth conditions set according to the diVerent demands of
the various bacterial strains.
