Which coffees are on regular rotation at your shop? How do you decide which roasters to offer?
George Howell, Ritual and Heart are the primary roasters we use these days, though it’s changed over the years. Locally, we work with Anthology Coffee. We have a preference for coffees with lighter, more fruit-forward profiles. It’s also very important to us that we work with people who have a similar concern for ethos and quality. We’re constantly receiving and sampling coffees from which we choose our favorites for the menu.
