Double Chocolate Chunk Muffins
Adapted from the back of a box of Multix muffin liners
Makes 12
Ingredients
220g self-raising flour
1/2 cup vegetable oil
1/2 cup butter milk
1/2 cup caster sugar
1 egg, lightly beaten
1 teaspoon pure vanilla extract
35g cocoa powder
115g chocolate chunks or chips
Method
Preheat oven to 180C. Line a muffin tray with paper liners.
Mix all dry ingredients together and make a well in the center. Mix all wet ingredients together and pour into the well. Add chocolate chunks and mix until just combined. Do not overmix as this can result in tough muffins. Spoon batter into liners and bake 15-20 minutes.
