Mineral content and solubility
The total amount of iron and zinc as well as the soluble amount of the two minerals in the togwa varieties prepared for the study are presented in Table 3. The largest amount of total iron was found in the maize based togwa, with a mean value of 85.4 ± 31.9 µg/g dw. The mean iron content for sorghum and cassava based togwa was 41.5 ± 7.2 and 28.6 ± 3.8 µg/g dw respectively. The amount of soluble iron was significantly lower in sorghum based togwa compared to the other two types of togwa (p < 0.05). However, the percentage of soluble iron was significantly lower (p < 0.05) in both sorghum and maize based togwa, 4.8 % (± 1.9) and 5.0 % (± 0.9), respectively compared with percentage soluble iron in cassava togwa, 13.3 % (± 2.8). Zinc was to a larger extent found in sorghum and maize based togwa, where both the total and soluble amounts were higher compared to cassava based togwa (p < 0.05).
