In order to determine optimal extraction conditions, this study investigated the effects of a range of experimental
parameters including temperature, time and ratio of water-to-leaf, on the yield of papaya leaf polyphenols. The effect
of these varying conditions on free radical scavenging and antioxidant activities of extracts was also assessed. This study
also compared the extraction efficiency of water as an aqueous solvent, in comparison to the organic solvents ethanol,
methanol and acetone. In addition, a method to prepare a crude papaya leaf powder was developed using the optimized
extraction conditions.
