Proanthocyanidins, also known as condensed tannins, are
polyphenolic compounds containing up to ca. 20 flavanol units
(e.g., (þ)-catechin, ()-epicatechin, (þ)-gallocatechin, and
()-epigallocatechin). Procyanidins are the most common group of
proanthocyanidins, consisting of the flavan-3-ol units ()-epicatechin
and/or (þ)-catechin linked by C4eC8 or C4eC6 bonds
(type-B structures), or doubly linked by an additional C2eC7 ether
(acetal) bond (type-A structures); gallic acid can occur as an ester at
C3 of the flavan-3-ol residues
