Texture analysis was performed for samples with dimensions of
2.5 cm of diameter and 1 cm of height by means of sample compression
with an aluminum cylindrical probe with 45 mm diameter till reach 50%
of the original height. The results of hardness, cohesiveness and
chewiness were obtained from a force vs. time curve. The analysis
was performed in triplicate for both treatment and analysis using
load cell of 50 kg and the following parameters for measurement:
pre-test speed of 1 mm s−1, test speed of 5 mm s−1, post-test speed
of 5 mm s−1 and time between two compressions of 5 s.
