Statistical analyses of texture analysis, loaf size measurements,
and profile analysis were carried out with Statistica 11 software
(StatSoft Inc., Tulsa, Oklahoma, USA) using one-way ANOVA. Pairwise comparison was done with Tukey HSD post hoc test. Where
data did not meet the requirements of ANOVA, Kurskal-wallis nonparametric test was used. 5% significance level was applied. At
profile analyses outliers (out of the range of mean ± standard deviation) were excluded from the analysis.
Hierarchal cluster analysis (Ward's method and Euclidian distances), ranking preference (Friedman test with Dunn post hoc
test), and penalty analysis were carried out using XL-Stat software
(Addinsoft, New York, USA).
