Place the pork and hoisin sauce in a medium glass or ceramic bowl and toss well to coat the pork. Set aside for 10 minutes to marinate.
Step 2
Heat half the oil in a large wok over medium-high heat. Add half the marinated pork and stir-fry, tossing, for 2 minutes or until the pork is just cooked through. Transfer to a plate, cover loosely with foil, and set aside. Repeat with the remaining marinated pork.
Step 3
Heat the remaining oil in the wok over medium-high heat. Add the onion, capsicum and beans, and stir-fry for 2-3 minutes or until tender crisp. Add the garlic and ginger, and stir-fry for 1 minute. Add the pork and rice to the wok, and stir-fry for 2 minutes or until heated through and well combined. Add the soy sauce and toss until combined.
Step 4
Remove the wok from the heat and stir in the coriander.
