In brief, bentonite and potassium sorbate were suggested to have the possible influence on fruits’ metabolic activity leading to great difference in quality properties and physiological characteristics; these included weight loss, respiration rate, total sugar and acidity, soluble solids content, pectin content, and ascorbic acid content. The effects of the coatings affected these characteristics such that storage time was extended and nutritional content was preserved. The particular properties of bentonite contributed to the coatings having preservative effects not seen when using chemical treatment alone. Similar results were reported in earlier publications (Perdonesa et al., 2012; Djioua et al., 2010; Freire et al., 2005; Hoa and Ducamp, 2008). In most of the indexes, there were better performances in the group with the entonite/potassium
sorbate coating, which suggests a cooperative action between bentonite and potassium sorbate.
