Most biofilm studies have been performed with motile bacteria and
motility is considered an important aspect in the initial stage of attachment
(Lemon et al., 2008; O'Toole and Kolter, 1998; Pratt and Kolter,
1998).Most Lactobacillus spp. are non-motilemicroorganisms including
L. plantarum strains used in the study (Kleerebezem et al., 2003), and
consequently the biofilm is initiated from cells that sediment to a surface.
Once sedimented, L. plantarum is capable to form biofilms on materials
relevant in the food industry such as SS and PS but the capacity
to form high density biofilms as determined by CV staining is strain dependent.
