2.2.4. Scanning electron microscopy
To study the morphology and microstructure of starch gels, the
cubic blocks of freeze dried starch gels (as prepared in Section 2.2.3)
were used. Thin slices of the freeze dried samples with a moisture
content of less than 3% were fixed on an aluminum sample holder
and coated with gold by a sputter coater (Fisons Instruments, England),
and then examined by a scanning electron microscope
(Leica Cambridge, England) under high-vacuum conditions at an
accelerating voltage of 20.0 kV (Lee & Rhee, 2007; Lu, Duh, Lin, &
Chang, 2008; Wang et al., 2013).
