2.3. Esterification of 2-phenethyl alcohol with fatty acids
Similar procedures were used as reported in our previous study by replacing the methionol with an equal molar concentration of phenethyl alcohol for chemical, and enzymatic esterification of
fatty acids, and transesterification of butter oils (Li et al., 2014).
The esterification reaction was carried out in triplicate and the mean and standard deviation (SD) yield of each 2-phenethyl alcohol-derived fatty acid ester was determined. Calibration curves were obtained using standard 2-phenethyl alcohol and 2-phenethyl esters standards measured by GC–MS (Fig. 1). The acid and thermal stability tests of each synthesised ester were performed by following the same methods as in our previous study (Li et al.,2014).
