Candy Production Process
Candy production is carried out with high temperature cooking method and although traditional additives and technologies are used, recently additives other than sugar have started to be used for obtaining products in new shapes and colors. The candies cooked in high temperature may be sugar-based or sugar free. The fundamental additives of sugar-based candies are high quality sugar and glucose syrup. For the sugar free candies, generally isomalt and maltitol are being used. The new candies may be dependent upon the technology used. For example, they can be kept with or without filling material, can be shaped or painted.
