Water-holding capacity (WHC) was assessed on
the GS muscle using a piece of filter paper put on the
freshly cut surface of the muscle and measuring the
time (in tenths of seconds) required for the paper to
become wet (Charpentier et al., 1971); a greater value
is associated with better WHC.
