Freezing rate of all the mushroom samples with and without
the application of ultrasound was measured. The variation of
temperature at the geometric center of these samples was
monitored by using the T-type thermocouples connected to a
data acquisition system. The initial temperature of the samples
was initially adjusted to 10 C. The change of temperature
was then recorded from 10 C to 20 C with a data acquisition
rate of 1 Hz (i.e., data in every second). Obtained data were
averaged to get freezing curve.
