Longan candy and glace were produced from mixed varieties of Dor and Haew in a sweet and less sweet form. An acceptability test was conducted by a taste panel and by a sample population consisting of age groups from 10 years to over 45 years was also investigated. All of the products were accepted satisfactorily in terms of colour, shape, flavour and texture. Polyethylene bags were preferred for packaging if available in the supermarkets, department stores and cooperative stores etc. A marketing test showed that the products were feasible in the Thai market, but improvements were needed according to consumer preferences, such as odour and appearance of the products. Since the price of longan candy and glace was higher than similar products they should be targeted at higher income groups and also should be differentiated and sold as valuable gifts and souvenirs. Packaging sizes of half and one kilogram were recommended.
