The results from this study showed that mixed starter culture
(L. plantarum ZY40 plus S. cerevisiae JM19) had very great effects
on biogenic amine contents in silver carp sausages. The addition
of the mixed starter culture was capable to inhibit the growth of
undesirable bacteria such as Pseudomonas and Enterobacteriaceae,
and consequently reduce the accumulation of putrescine and
cadaverine; whereas tyramine accumulation was enhanced because
of the slow pH decline. To avoid the excessive biogenic
