Whey powder solutions were prepared with different initial lactose concentrations (4.5%, 8.0%, 12.0%, and 16.0% of lactose) using deionized water and deproteinized by heat treatment at 115 oC for 10 min in an autoclave. Precipitated materials were removed by centrifugation at 22,000g and at 4 oC for 10 min to produce deproteinized whey permeate (DP-WP) (Cristiani-Urbina et al., 2000).
