Lastly, the MS/MS mass spectrum of
m/z 741.18 was assessed, showing peaks at m/z 609.14 and
301.02 corresponding to the loss of a pentoside (M–H–132) and
to the radical anion of the aglycone (m/z 301.02); therefore, this
mass corresponded to quercetin-3-O-rutinoside-7-O-pentoside.
These two compounds were identified for the first time in jujubes.
