2.8. Cake texture
Texture profile analysis (TPA) was performed using a TA-TXT Plus Texture Analyzer (Stable Micro System, Godalming, UK) using the Texture Exponent 32 software (version 4.0.8.0, Stable Microsystems, Godalming, UK).
Measurements were performed onthree cakes from each batch, and all the formulations were
repeated with a second set of batters.
