The b-conglycinin hydrolysates were degraded by pepsin and
trypsin and the electronegativity of the degraded products
increased. The content of peptides with molecular weight from
10 kDa to 20 kDa remained relatively stable. The proportion of
hydrophobic peptides increased slightly, and the surface hydrophobicity
indices did not change significantly. Therefore, the
peptides in the b-conglycinin hydrolysates were degraded
partially by in vitro digestion, but the degree of degradation was
minimal.
