The endogenous content of acetaldehyde in fruit pulp was measured by sealing
2 cylinders of pulp (each 1 cm diameter and 1 cm long) in a test tube. This was
incubated at 30°C for 20 minutes before determining the acetaldehyde content of
the headspace by gas chromatography (Davis and Chace, 1969).
All work was conducted at 17-18°C with each sample being replicated four times.
