In peaches, a-carotene mass fractions were lower after freezing,
and zeaxanthin reduced at 2.6 months storage at 20 C. However,
considering the low mass fractions (8.2 lg/100 g and 26 lg/100 g,
respectively) and the fact these carotenoids are chemically similar
to b-carotene and lutein, respectively, for which no degradation
was observed, an underestimation of the mass fraction uncertainties
for these carotenoids in this matrix may have occurred.
Significant degradation was observed for b-cryptoxanthin
(3.5 months storage) and zeaxanthin (8.9 months) in oranges
stored at 20 C compared to 70 C. This was not verified in samples
