Changes in levels of total ascorbate (Vitamin C) and ascorbic acid content of orange juice (OJ), (figures a and b) and Kiwifruit cremogenate (KC) (figures c and d) fortified with WEP (Rosa canina -Rc-, Quercus ballota eQb- o Sanguisorba minor eSm-) after filtering, time 0 (▫) or after 24 h (-) at 20 C. Figure 1b embedded shows the degradation rate of ascorbic acid in aqueous solution, control (B), 20 (▵), 40 (▫) and 60 (◊) mg kg#1 ascorbic acid under the same tested conditions as OJ and KC (24 h at 20 C). LSD (p < 0.05), least significant difference, was used for significant difference comparison among means of samples. Values represent the means ± SD of three replications for each of three sub-samples per sample.
