The amount of non-casein nitrogen was determined
after adjusting the pH to 4.6, using the Kjeldahl method. This
observation is in accordance with the increase of pH 4.6 soluble
peptides in the samples containing 10 pkat mL1 determined in this
work; there was a 5- to 6-fold increase during 30 days of storage in
both works. Nevertheless, a direct comparison of the results is not
reasonable, due to the different methods used.
