Antioxidant Compounds. The total phenolic, flavonoid
contents, and DPPH free radical scavenging activity were
followed after the extraction of steviol glucosides using
subcritical water. The authors found 48.63 mg of gallic acid
equivalent/g extract for TPC, 29.81 mg of quercetin
equivalent/g extract for flavonoids, and 92.50% for DPPH
inhibition.76
