DPPH radical scavenging activity was determined as described by Maqsood and Benjakul, (2010). To the tomato extract (0.05 mg/mL; 1.5 mL), 1.5 mL of 0.15 mM DPPH in 95 % (v/v) ethanol was added. The mixture was mixed vigorously using a vortex mixer and allowed to stand at room temperature(26–28°C)inthedarkfor30min.Theabsorbanceof the resulting solution was measured at 517 nm using a spectrophotometer. The blank was prepared in the same manner, except that distilled water was used instead of the sample. A standard curve was prepared using tannic acid in the range of 0–100 ppm. The activity was expressed as mg of tannic acid equivalents (TA)/g sample.
