3.3. Determination of alcohol content, soluble solid content, pH and acidity of H. erinaceus vinegar
Changes in alcohol and soluble solids of H. erinaceus vinegar during acetic fermentation are shown in Fig. 2(a). The alcohol content decreased gradually during acetic fermentation and reached 0% after 9 days of acetic fermentation. The soluble solid content decreased slightly during acetic fermentation and reached 5 °Brix after 9 days of acetic fermentation.
