The probe was set to move through the
holding cell for 50mm at a pretest speed of 6.0 mm/s, test speed of
3.0 mm/s, and posttest speed of 10.0 mm/s. Samples of 5 g were placed
in the holding cell for eachmea surement; each treatment was measured
6 times. The firmness of tomatoes was calculated by dividing peak force
(N) by distance (mm).
