3.5. UV-B treated oyster mushroom as an efficient source of vitamins D
With very few exceptions (Jasinghe & Perera, 2006; Ko et al.,
2008), most of the previous work on UV-treated mushrooms was
carried out using the commercially most important mushroom, A.
bisporus. Under technically feasible conditions the maximum concentrations
typically ranged from less than two to more than
20 lg/g of dry matter. Oyster mushrooms accumulated vitamins
D2 and D4 more efficiently. Around 40 lg/g dry of matter was
formed after just 1 min of exposure in sliced fruiting bodies
