García-Magaña et al. (2013) reported values of 6.81 g GAE/100 dw, in ‘Ataulfo’ mango peels and 2.46 g GAE/100 dw, in ‘Ataulfo’ mangopaste,so that when the DAMC: DAMB ratios were used to substitute the sugarcane in the preparation of starch-molded man- go snacks there was an increase in TSP. Concurrently all DAMC: DAMB substituting formulations had higher antioxidant capacity than control.
