pH (a) and temperature profiles (c), and pH (b) and thermal (d) stability of the purified trypsin. The pH profile was studied at 60 ◦C at various pHs. For temperature
profile, the activity of trypsin was determined at pH 9.0 using BAPNA as a substrate. For pH and thermal stability, the remaining activities were assayed at pH 9.0 and 60 ◦C
using BAPNA as a substrate. The activity of the enzyme before incubation was taken as 100%. Buffer solutions used for pH activity and stability are presented in Section 2.
