As observed, the higher the oil content in the emulsions, the bigger particle size became. This could be due to the increase in the dispersed phase concentration, which could facilitate the droplet flocculation rate and therefore the reduction in the ratio between the interfacial stabilising material and the dispersed phase. Similar results have been reported by Sánchez-González et al. (2010) in emulsions of bergamot EO and chitosan aqueous systems.
