Effect of extraction time and number of repeated extraction cycles To determine the effect of extraction time and number of extraction cycles on the extraction ef®ciency, cereal lipids were extracted varying the static extraction time from 5±15 min and the number of extraction cycles from one to three. All extractions were performed at 1208C. As shown in Table 1, only a slight effect of these two parameters on extraction ef®ciencywas observed.Saturated and unsaturated FA values of extracted cereal lipids reached an upper plateau at5 min extractiontime,andadditional extraction time resulted in a slight decrease of extracted FAs. In addition, only a small increase of the extraction yield was observed when the extraction process was repeated by running two extraction cycles. Increasing the number of extraction cycles up to three did not improve extraction ef®ciency. Extraction ef®ciency may depend on the ability of the extraction process to break the tertiary structure of cereal proteins and on the binding capacity of cereal lipids with respect to matrix sites
