Milk fermented with Lactobacillus starters has a pronounced inhibitory
effect on the M. bovis BCG. According to the carbohydrates fermentation
pathway, Lc. lactis is an obligate homofermentative bacterium,
which produces almost exclusively lactic acid from the metabolism of
hexoses, while Lb. paracasei subsp. paracasei and L. casei are hetero fermentative
(Ward and Timmins, 1999).
