1/3 cup vegetable oil Sauce
2 tbsp garlic, minced 1.5 cup chili paste(dried chili soaked and blend)
2 tbsp shallots, minced 2 cup tomato ketchup
2 tbsp lemongrass, minced 1 tbsp white vinegar
2 tbsp ginger, minced 1 tsp sugar
4 pcs Mud crab 1 cup hot water
tt salt
1 tsp cornstarch
1/2 cup water
2 pcs eggs ,beaten
METHODS OF PREPARATION
1. Combine all the ingredients for the sauce and set aside.
2. Heat the oil in a wok over a medium to high fire, add a minced garlic, shallots, lemon grass and ginger. Stir fry until fragrant, approx. 1 to 2 minutes.
3. Add sauce mixture and allow to boil. Reduce heat and add crab piece and claws, turning to coat well. Add the corn starch mixture and salt. Stir in the beaten egg till barely cooked and remove from fire.
4. Serve hot with bread square or mantou buns for dipping.
