Subsequent experiments examined even lower concentrations
of calcium ascorbate and included sodium and potassium ascorbates
for comparison. Table 2 shows that calcium, sodium and
potassium ascorbates were equally effective at all the concentrations
tested. The lowest concentration of ascorbate, 6.2 mmol/l (≡
1.2 g/l), showed a small but significant increase in postharvest life
to about 4 days.
