The results showed that heat transfer by
convection is important to decrease freezing time
and improve freezing rate. Freezing rates will be
larger for products placed in external layers than
internal ones. Consequently, same products placed
in different layers inside the cardboard box can have
distinct freezing times. As freezing rate is directly
related to quality, the products subjected to a higher
freezing rate (external layers) could have a better
quality than products frozen at a lower freezing rate
(internal layers).
