Pullulan is produced from starch by the fungus Aureobasidium pullulans. Available as a white powder it is odorless, flavorless, and highly stable. Pullulan is a neutral glucan (like Amylose, Dextran, Cellulose), with a chemical structure somewhat depending on carbon source, producing microorganism (different strains of Aureobasidium pullulans), fermentation conditions.
