2.2. Immobilization of L. casei
2.2.1. Immobilization on apple pieces
Apples (Starking Delicious, Zagora Region, Pelion, Central
Greece) were cut in small pieces (cubes of z1 cm, with skin) and
placed in a conical flask containing L. casei cells in MRS broth. The
mixture was left undistributed at 37 C for 24 h. When the
immobilization was completed, the fermented liquid was decanted
and the immobilized cells were washed twice with sterilized
Ringer's solution at ¼ strength
