3.1. Chemical analysis
Chemical analysis showed that rice flour is a rich source of
carbohydrates and contains 7.74 g of proteins/100 g, 0.87 g of lipids/
100 g, 0.72 g of ash/100 g, 6.10 g of water/100 g and 90.67 g of
carbohydrates/100 g. The majority of the carbohydrates is starch
and this significant amount of protein needs to be considered.
